Known for its sharp pungent heat ,it brings distinct flavour ,colour and taste to food. we buy best quality red chillies directly from the farmers of MATHANIA .they are then sorted to remove the bad ones. the process of drying and sorting require lots of patience and care .freshly harvested chillies have a moisture content of 65 %to 80 % , after 2 to 3 weeks of drying a maund (40 kg)of chilly is reduced to only 6-7kg Diljit mirchi powder or chilli powder or ??? ?????? (harvested from mathania -rajasthan ) is spicy in flavour and gives a bright colour to the food. It is processed in neatly maintained hygienic conditions
