Grown extensively in Uttarakhand, black soybean is harvested in October and is available in markets by November-end. While Bhatwani is a Garhwal’s favourite, Churkani is common in Kumaon. Bhatt Dal nutrition value is commendable; Kala Bhatt dominate kitchens in the Garhwal and Kumaon regions of the state all round the year be it marriages, festivals or humble home kitchen. Traditionally cooked in Iron vessels this black Soybean is rich in iron and protein. It’s a well known fact that farming in Uttarakhand is free of any synthetic chemicals and fertilizers. Natural Farming is a second nature of farmers here. The produce is humble and in its unprocessed natural state.
