The raised easy-to-hold sides allow a strong, comfortable grip during handling. This plastic tray does not require a great deal of storage space, and is very easy to handle. They can be washed easily. They are wonderful for making decorated cookies and any application where you are cutting out dough and then moving it through several steps that require drying/rising/etc. Things don't really stick to the tray because of the ridges/small pattern that you'd expect to find on any cafeteria tray. It is dishwasher safe and has longer shelf-life. The texture on the tray prevents the things served in the tray from slipping
