At MadhuCrafted, our passion lies in preserving the natural integrity of honey, ensuring that all its beneficial properties remain intact. Our honey is produced from our own beehives located in the pristine landscapes of Uttarakhand, Rajasthan, and Haryana, where they are tended by our family beekeepers. We adhere to scientific and ethical beekeeping practices, placing our beehives around flora free from toxic environments to deliver safe food with incredible texture and unique natural aroma and flavors. Despite the uneconomical nature of our low production volume, we prioritize maintaining the raw status of our honey. We avoid exposing honey to temperatures higher than those in the beehive and refrain from commonly prevalent filtration processes. Instead, we only coarse filter our honey, preserving its pollen, propolis, nutritious bee bread, and minerals. Though this process requires more time and care, we believe it is worth the effort to provide the human race with one of the world's most premium honey. In contrast, most commercially processed honey available in the market undergoes mild to excessive heating during production to facilitate fine filtration, bottling, and to prevent fermentation and crystallization. Unfortunately, this high-temperature processing destroys many of the enzymatic properties, as well as the flavor and aroma of the honey, solely for aesthetic appeal and increased shelf life. Heating honey above 40°C results in the loss of nearly 200 nutritious components, including antibacterial properties. It destroys invertase, an essential enzyme, and converts honey into sugar, increasing the level of toxic HMF. Even NMR tested honey has HMF above desired levels 40 mg/kg. One of the challenges honey lovers face is the lack of policing around unpasteurized and raw food labeling globally, leading to "green washing" and consumer confusion. Not all honey brands adhere to these standards, often sourcing honey from unknown or unreliable sources.
