Lauki, also known as bottle gourd or calabash, is a long, light green, bottle-shaped vegetable that is widely cultivated and consumed in India. It's a climbing or trailing vine with large, white, trumpet-shaped flowers and a smooth, light green skin when immature. The flesh is white, firm, and has a mild, slightly sweet flavor. Lauki is known for its high water content (around 92%) and is a good source of vitamins C and K, as well as calcium.
