The orecchiette grandi are made from durum wheat and water. The orecchiette owes its name to its shape, because it means ears that is a concave shell to be made with the thumb or with the tip of a knife without blade. This special shape makes orecchiette suitable for most pasta recipes this makes the pasta also suitable for a vegetarian or vegan diet. The orecchiette cook easily and do not stick together.
