Postharvest Engineering of Fruits and Vegetables has been written principally for the use of agricultural process engineering students as a textbook according to the new undergraduate level curriculum introduced recently by the Indian Council of Agricultural Research. It will also serve the students of horticulture food science food engineering and food technology particularly the topics of fruits and vegetables. An attempt has been made to include the current information on the processing methods equipment used and process flow charts involved in the manufacture of different products from fruits and vegetables. The book begins with the structure and composition of fruits and vegetables for morphological understanding as the basic knowledge on the physical mechanical and theological properties. Fruit and vegetable growth development and maturation stages for proper harvesting time with handling transport and storage technology are dealt with for proper disposal of the farm produce to a particular use or market followed by the preservation principles and techniques packinghouse operations and quality control techniques. Methodology and processes for product development are described through flow charts. A few methods of fruit and vegetable processing such as canning and bottling freezing drying and dehydration and concentration by evaporation have also been described. About the Author P. S. Phirke is former Head Department of Agricultural Process Engineering Dr Panjabrao Deshmukh Krishi Vidyapeeth Akola Maharashtra. He obtained his degrees of MTech (PHE) and PhD (Engg.). Dr Phirke has authored a book Processing and Conveying Equipment Design and has also brought out several research digests booklets practical manuals training manuals fabrication drawings and research papers.
