This book has been primarily designed as a lead to third and fourth semester students of National Council for Hotel Management (NCHM) Noida, preparing for their term end examinations. The idea for having a book in this form (Question / Answer) was floated by our students who wanted a ready reckoner at the end of the year to revise; This idea brought about two academicians sharing the same thought, to guide their students through this revision book. About the Aurhor Ashwani Kachroo an alumunus of IHM, Pusa / Srinagar, is working as HOD at IHM Gurdaspur. He has a total experience of 25 years in the field of Hospitality. He has worked in various hotels in India and abroad for more than nine years. He has been teaching F&B Controls from the last 15 years. Arvind Varma, an alumunus of IHM, Ahmedabad, is working as HOD at AIHM Chandigarh. He has total experience of 23 Years. He started his career as a Captain at Hotel Sofitel Surya, New Delhi and has experience in India and abroad. He has been teaching F&B Controls for the last 10 years.
