The Dhaniya seeds are mildly warm and slightly earthy, with citrus undertones similar to orange peel. The whole seeds are used in pickling brines, seafood boils, and dry-fried before crushing or grinding. Coriander seed is a spice in garam masala and Indian curries which often employ the ground fruits in generous amounts together with cumin, to thicken the gravy.
