Soy flour is produced by pressing dehulled soybeans with a solvent to separate the soy oil. The resulting soy grits may be used directly or milled into soy flour. Soy grits or flour contain approximately 45–50% protein along with carbohydrate that imparts a distinctive 'beany' flavor to products.
