The kidney- or heart-shaped seeds that sprout at the base of the soft, luscious cashew apple are called cashew nuts, or kaju. Their shell is made of two layers, the outer layer of which contains a caustic oil that needs to be burned off in order to be eaten. After that, the second shell is removed and any remaining hazardous materials are eliminated by roasting or boiling the nuts.
