Jiru is an Indian spice mix consisting primarily of ground, roasted cumin (jiru) and coriander (dhana) seeds. Some cooks add a variety of other spices such as red chili powder, cassia leaves, cinnamon bark, and black pepper, which makes the mixture somewhat similar to garam masala. Cumin powder, also called Jeera powder or Ground Cumin is a staple pantry ingredient in many cuisines. Ground cumin is used in many marinades and spice blends, such as Garam Masala. Cumin seeds are traditionally used in tempering and as a flavor-enhancing spice base for curries. Ground cumin powder is added to dishes while cooking and the roasted version can be sprinkled over cooked dishes and served.
