We tend to associate vitamins and minerals with a rainbow of fruits and veg. Yet the white milk of the coconut, used to make coconut powder, is crammed with various vitamins and minerals. It’s an excellent source of Vitamins C, E, and a delightful number of B vitamins. It’s also got iron, calcium, magnesium, selenium and potassium in it.
